I want to be a Foodie
Want to make something really tasty? I call it…Chickeggplanatoe.
Chicken, Eggplants and Tomoatoes!
6 Chicken Legs - or whatever chicken you like
2 Tomatoes - Diced
4 Tablespoons Tomatoe Sauce (the canned stuff)
1 Eggplant - Diced
6 Cloves garlic (chopped very small)
3 Tablespoons ginger (Julienne Style)
2 Tablespoons Cumin
Rosemarry & Oregano (or loads of fresh basil)
Salt & Pepper to taste
- Brown your chicken with your ton of garlic and ginger in olive oil, add salt, pepper and if you’re using dried herbs add them now.
- Add your tomatoes, your tomato sauce and cumin. Stir, simmer, cover for 15 minutes
- Add your eggplant and some water. Stir, simmer and cover for another 15 minutes or until chicken is cooked.
- If you’re using fresh basil then add all that in, stir quickly and then take it off the heat.
Eat and be happy! I made that up myself, it was so amazing and delicious, I should just be a chef. Me and my gourmet cooking skills.
